No one ever accused me of being a big Sarah Palin fan but I must say she called this one in 2008. I love baby carrots even though I know they’re good for me.
Most baby carrots you can buy are “manufactured” right from a factory. They’re ‘cut and peel’ carrots or carrot shaped slices of peeled carrots which were too twisted or knobbly for sale as full-size carrots. Before the ’80′s, over 400 tons of carrots a day (!) were discarded because of their imperfections.
A carrot grower, Mr. Mike Yurosek, was unhappy with all of that waste and looked for a way to reclaim what would otherwise be discarded. He was able to find an industrial green bean cutter, which cut his carrots into 5 cm lengths, and by placing these lengths into an industrial potato peeler, he created the baby carrot.
Today baby carrots hold a significant percentage of the carrot market. In addition to grocery stores, they are sold in single-serving packs with ranch dressing on the side and even at some McDonald’s as an alternative to french fries.
